Chikurin Okayama Fukamari Junmai 300 ml

The Chikurin brand is the limited release label from the Marumoto Brewery, which was founded in 1867 at the base of the Chikurin-ji Mountains, in Okayama-ken, one of Japan’s most prized agricultural regions. The Marumoto Brewery is set apart from most sake breweries because they own their own fields and grow the rice, which is 100% yamada niskiki rice grown organically.

The "Fukamari" is the most full flavored sake in the Chikurin line, and in the shop – perfect for matching with intense or savory foods, and it the fact that there is a little aged sake blended in adds to it’s complexity and depth. Must be kept and served cold.

This name “Karoyaka” means lightness in English, and this sake is vibrant and lively and made for pairing with seafood and oysters. Yet it still has an amazing amount of depth and body, balanced with freshness and vivacity which is preserved by minimal pasteurization (once instead of the normal twice). Must be kept and served cold.

Kasumi Tsuru Hyogo-Ken Kimoto Extra Dry 300ml

For lovers of very dry sake, this is almost reminiscent of white wine, and has a striking sense of body, balance and complexity of flavor. It has a somewhat musky note making it perfect for pairing with cheese, but also shows a depth with notes of chocolate and a zip of watermelon-y acidity. Sounds odd, yes, but it’s carried in perfect harmony and reveals the potential depth and complexity of sake. Serve chilled.

Masumi Arabashiri Junmai Ginjo Nagano 720ml

“First Run” or spring sake is only around for a short while each year. It is “fresh from the vat” and consequently has bright flavors, high acidity and a pleasant yeasty quality. It is packed with vivid flavor and plenty of verve and can pair well with a lot of foods. It is a “namesake,” and thus unpasteurized, so it must always be kept and served chilled.

Yoho Mioya Ishikawa Junmai 720 ml

Yuho sakes depart from the Ishikawa and Noto Hantou style of producing big, rich yamahais. Yuho’s method is entirely sokujo, creating a milder and cleaner flavor profile. This jumai is well balanced, with mellow plum and floral notes. It is a delicate, feminine style with a wonderful acidity. It’s once pasteurized and ought to be kept and served chilled, but can be very gently heated to reveal a new level of aromatic nuance.

Yuki No Bosha Akita Junmai Ginjo Nigori 300 ml

Most nigori, or cloudy sake (which is made from adding rice lees back in – not, as commonly mistaken, by forgoing filtration) is made from less expensive and lower quality sake. However, Yuki No Bosha, the first certified organic sake brewery is dedicated to high quality across the board, and their nigori is a junmai ginjo. It is also a lighter style nigori containing less rice solids, or kasu, so there is a balance between the flavor of the sake and the texture of the rice solids. It is bright and fruity but finishes dry with the lees creating a lively texture. Serve chilled – this is only once pasteurized.
