Yuki No Bosha Akita Junmai Ginjo Nigori 300 mlMost nigori, or cloudy sake (which is made from adding rice lees back in – not, as commonly mistaken, by forgoing filtration) is made from less expensive and lower quality sake. However, Yuki No Bosha, the first certified organic sake brewery is dedicated to high quality across the board, and their nigori is a junmai ginjo. It is also a lighter style nigori containing less rice solids, or kasu, so there is a balance between the flavor of the sake and the texture of the rice solids.
