While we are of the opinion that one could drink beautiful grower Champagne every night (what wine pairs better with more foods, after all?), we are aware that the majority of Champagne will be purchased and drunk during the holiday season. We at Chambers Street Wines are truly blessed to work with a wonderful array of growers (not only in Champagne) and to visit their cellars, walk their vineyards, meet their families and taste their wines. We also take a bit of inspiration from their sense of purpose, as they continue the work of their parents, and grandparents, and beyond. So we raise a glass to the farmers and vignerons everywhere who allow us to share their wines with all of you.

Below are some Champagnes from our favorite growers which, in addition to being delicious, display the interplay between tradition and terroir. It’s no accident most of the wines we love best are farmed organically or biodynamically. Whether it’s the resolutely classic wines of Andre Beaufort and Alexandre Filaine, the majestically mineral Champagne of Laval, the brightly expressive and pure wines from Fabrice Pouillon, or the cooly powerful releases from Huré Frères, all are individual, inspiring, and distinctive. Beaufort, André 2009 Champagne Ambonnay Brut GC (D 09/19)

This is classic Beaufort: balanced, rounded and finely filigreed with a judicious dosage. In truth, the 2009 Ambonnay Grand Cru tastes very dry for a Brut, closer to an Extra Brut in style. It shows a burnished golden yellow in the glass, adorned by a finely beaded and generous mousse. The nose offers notes of brioche, cardamom, cinnamon, roasted chestnuts, white flowers, and honeysuckle. The palate is powerful and broad, accented with aromas of Cortland apples, apple pie, and nutmeg that lead to a lingering, herbal finish. The 2009 Brut shows the pedigree of its Ambonnay Grand Cru fruit. It's delicious now, but it also has real aging potential. (Lot #09A. Disgorged Sept 2019.)

Gerbais, Pierre NV 15b Champagne Extra-Brut Grain des Celles 1.5L

A blend of Pinot Noir (50%), Chardonnay (25%), and Pinot Blanc (25%) from organically farmed vines grown in Kimmeridgian soils in Celles-Sur-Ource in the Aube. Initial fermentation is with indigenous yeast in tank, and the wine spends 30 months on the lees before disgorgement. The nose offers lovely aromas of apple blossom, apricot, honeysuckle and mint. The mid-weight palate is redolent of stone fruit, ripe Mirabelle plums, and tangerine, with a punchy mineral character lending gravitas. There's a lot of character to this well-priced Champagne that makes for a fine apéritif, as well as having the stuffing to enjoy with roasted fish, chicken, or strong cheeses. John McIlwain

Godmé, Hugues 2009 Champagne Brut 1er Cru Les Alouettes Saint Bets

Hugues Godmé 2009 Les Alouettes Saint Bets Brut is a single vineyard blanc de blancs from Villers-Marmery near the border with Verzy. The soils of this climat are very chalky with little topsoil. The grapes are farmed biodynamically, vinified in neutral oak with native yeasts, with no malolactic fermentation, and bottled with low sulfur. There is an electric sense of chalky minerality to this Champagne. While there is a degree of richness to the wine that hints at Verzy, and a silken quality on the palate derived from its time in wood, ultimately a cool, deft sense of fruit and chalkiness defines the nose and palate. Still a bit taut, there are floral and citrus oil notes on the nose, followed by Meyer lemon and a subtle salinity on the palate. The mousse is fine and the finish long, complex, and supple. This should shine brightly with a bit more time in the bottle.  John McIlwain

Godmé, Hugues NV Champagne Brut Verzenay Grand Cru Rosé

Comprised of 65% Pinot Noir and 35% Chardonnay from biodynamically farmed vines in the Grand Cru village of Verzenay on the northern slope of the Montagne de Reims. Aged for 5 years on the lees. Disgorged January 2018, bottled with 4g/l dosage. vintage base year is 2013 with approximately 60% reserve wine from the previous four vintages. The wine has pale salmon pink robe and a fine bead. The nose is expressive with pretty aromas of dusty rose petals, sour cherry, plum skin, crushed herbs and a hint of brioche. Distinctly savory on the palate with cool-toned vibrant fruit, nervy acidity, and impressive mineral depth on a long, mouthwatering finish. John McIlwain

Huré Frères NV Champagne Extra Brut Mémoire (Solera)

Based on a solera, or perpetual cuvée, started in 1982, the Mémoire Extra Brut is comprised of 45% Pinot Noir, 45% Pinot Meunier, and 10% Chardonnay, aged in foudre and bottled with 3 g/L dosage. The grapes come from all of the various Huré vineyard parcels and the cuvée is considered to be a broad "snapshot" of the domain's terroir and vinification aesthetic. Pale golden yellow in color and boating an ultra-fine bead, Mémoire offers soft aromas of Mirabelle plum, dried orange peel, lemon verbena, brown butter, with notes of honey. The palate is creamy, broad, round, and burnished with complex flavors of wild cherry, damson plum, heather honey, candied ginger, with a pleasing hint of nuttiness on the finish. There are multiple layers to this Champagne as befits its solera origins and it is better served by enjoying from a wine glass, rather than flute to allow the bouquet to develop fully. - John McIlwain

Laval, Georges NV (2016 Base) Champagne Cumières 1er Cru Brut Nature

Domaine Georges Laval is  a tiny, artisan estate in the 1er Cru village of Cumières, an amphitheater shaped village with full southern exposition. Here in the this sun-kissed (for Champagne, at least) appellation, the exuberant Vincent Laval makes some of our favorite organic wines. They combine power and elegance, with a fine mineral cut and soaring aromatics. The nose of the 2016 base offers aromas of plum skin, apple blossom, and wild honey. The palate offers flavors of ripe apple and pear skin, with a savor core of wet stone and green tea on a long rising finish. This release of the 2016 base spent an extra year on the lees before disgorgement and shows an additional layer of complexity for it. John Mcilwain

The palate shows punchy vibrant fruit on the attack, with an incisive minerality giving way to a rich and complex mid-palate. This is manifested by pungent soil notes, which give way to distinctly savory, mouth-filling, powerful finish. Disgorged in Spring 2019, dosage 2.5g/l. Les Valnons is a lovely, albeit somewhat atypical Blanc de Blancs from a village better known for its Pinot Noir. The robe on the 2012 has a pale gold color with a fine bead. This nervy Chardonnay offers aromas of wet stone, lemon oil, quinine, and quince. The palate is broad, expressive, and powerful offering citrus, spice, and mineral notes on a taut, complex, and detailed finish. Beaufort, André 1996 Champagne Grand Cru Ambonnay Brut (Dis 8/19)

With all its nuance and detail, this  23-year-old Champagne has the potential for wide appeal. On the edges it shimmers a more bright golden yellow with a burnished golden color, speckled by a fine and discrete mousse. The nose offers aromas of honeysuckle, Granny Smith apples, hazelnuts, chestnuts, vanilla, and smoky tones. The palate is round, circular, and weighty with aromas of lemon verbena and wisteria before a mineral, singing finish. This combines so many of the best qualities of Beaufort's Champagnes : strikingly nuanced aromatic detail, along with a gracefully powerful palate and a resounding finish. (Lot #96A. Beaufort, André 2008 Champagne Polisy Brut (D 10/18)

Our new shipment of the 2008 Polisy Brut was disgorged in October of 2018. 2008 continues to delight, even 11 years after the harvest. The current disgorgement of the Polisy has a pale yellow robe, fine bead, and soft mousse. The nose is soft and pretty offering aromas of golden apple, acacia, lemon curd and apple blossom. The mid-weight palate is bright and brisk on attack, with flavors of Macintosh apple, bergamot, and green tea giving way to a fine core of minerality lending focus. This has good length and energy on  a lifted and expansive finish. This is very good with vibrant fruit and nascent aged flavors knitting elegantly. A fine effort from the Beauforts! John McIlwain

Filaine (Fabrice Gass) NV Damery Cuvée Speciale Base 16

Filaine is one of our favorite Champagne houses.  And the singular Fabrice Gass is one of our favorite Champagne characters. His wines  are made up of  Pinot Noir/Chardonnay/Pinot Meunier from the south-facing village of Damery in the Vallée de la Marne. The wines are made in the manner of 100 years ago. Fabrice farms without chemicals, ferments in wood, and due to the age of his barrels, avoids malolactic fermentation.  This disgorgement is based on the 2016 vintage and balances nicely the classic richness of Damery with undertones of minerality.  Aromatically the wines offer up aromas of baked apple, spices, and soil notes. On the palate flavors of ripe red fruit and a pervasive sense of chalkiness vie with with a creamy texture on the broad, rich finish. This is a perfect wine for the holiday table with its balance of generous fruit and earthy structure. John McIlwain

Huré Frères NV Champagne Brut Reserve L'Invitation (15b)

20% Chardonnay, 40% Pinot Noir, 40% Meunier. The base vintage of the current disgorgement of the Hurè Fréres Brut Reserve L'Invitation is 2015, with the balance being made up of 40% reserve wines. The nose offers aromas of baked apple, brioche, wild strawberry, orange oil, white flowers, and ginger. On the broad, medium-bodied palate there is a fine tension between the ripe red fruit, citrus peel, frisky acidity, and a fairly serious core of stony minerality. This develops nicely in the glass displaying a frothy mousse and coltish, energetic fruit initially, with the earthy Montagne de Reims character emerging with air. This is a fine Champagne to accompany smoked fish, crudo, and all manner of charcuterie. Every year the Hurè brothers seem to grow as winemakers and each new disgorgement is a treat. John McIlwain

Laval, Georges 2015 Champagne Cumières Premier Cru Les Chênes

If ever there were an argument that portions of Cumières merit Grand Cru status, Laval's Les Chênes makes a convincing case. The amphitheater-shaped vineyard is something of a sun trap and produces Champagnes of power and precision in Vincent's able hands. Made up of 100% organically-farmed Chardonnay from the eponymous lieu-dit on the eastern side of the village (near the bottom of the slope down by the river), where the soils are chalky rather than the clays of other portions of the village. This is a particularly powerful blanc de blancs. While the nose offers yellow fruit, tangerine peel, green tea and citrus aromas, the mid-weight, sinewy, and broad palate is pungently mineral, displaying notes of salt, lemon curd, and quinine on a nascently complex, powerful, persistent finish. This is certainly delicious now, but tastings of previous vintages of Les Chênes lead one to believe there is plenty ahead for the patient. John McIlwain
