Philippe Pacalet Close-Out, Last Chance!

For the last ten years, Philippe Pacalet, nephew of Marcel Lapierre, has been making some of the most elegant wines in Burgundy. Acting mostly as a negociant, he has sought out plots of old vines, especially of Pinot Fin, which are farmed to his specifications with plowing and organic treatments. Fermentations are whole-cluster, with wild yeasts and no sulfur or other additives. A small dose of SO2 is added at bottling, which is done by hand with minimal or no filtration. We have always loved the purity of his wines, which brilliantly show the character of each site, and in 2007 his wines are especially lovely. A change of importers over the last year has left us with the ability to offer a small group of Pacalet's 2007s, and the Pommard 2008, at enormously reduced prices.
