We take our rosés seriously at Chambers Street - yes, they should be fun to drink, but they should also be subtle and complex - real wines of terroir. The majority of our rosés are organically farmed and fermented with wild yeasts, giving wines of complexity and purity with good acidity and length in the finish.  Not just for refreshment on a hot day, they are great food wines that compliment a wide variety of cuisines. For many years now the most popular rosé at CSW has been from our friends at Domaine Bernard Baudry in Chinon - this superbly elegant Cabernet Franc is in short supply this year, so don't hesitate. A new favorite is our own import from Domaine Les Fouques, near Hyères - certified organic and biodynamic, this wonderful estate makes two rosés which are among the most complex and distinctive in Provence. Baudry 2012 Chinon Rosé

It happens every spring, Baudry Rosé arrives and we fail to have the patience to wait until the travel shock has warn off to taste it... The wine is more full-bodied this year than in past years, but retains all of the earthy pepperiness and minerality that we have come to love about it. 100% Cabernet Franc sourced from several parcels including Les Granges, the wine is fermented with native yeast and though it's Rosé in color, it brings to mind the terroir of Chinon as manifested in Baudry's red wines. We love the spicy, earthy aromatics of the wine, but it's the wine's mouth-filling, powerful midpalate and long finish that speak volumes of its quality. This is a wine to relish all summer long and to store into the fall if you've got restraint... -msb

Les Fouques 2012 Cotes de Provence La Londe

A  beautiful rosé from Les Fouques in Hyères, certified organic and biodynamic for more than twenty years. Pale copper/onion skin color, very subtle earthy peach, citrus, red fruit and spice aromas. Light-bodied but with great length, the palate is a complex blend of citrusy red fruits, earth and spices that finishes with lingering mineral flavors. This will deepen over the next 6 to 12 months and is delicious now. Subtle enough for oysters mignonette, great with grilled fish, even roast chicken. Highly recommended. This will be lovely for Thanksgiving — subtle but with enough flavor and density to complement all the traditional dishes. Also think of the suberb Hauvette Rosé "Petra," the full-flavored deep-colored Ilarria Rosé from Irouleguy and the earthy and delicilus Domaine Guion Rosé from Bourgueil. DL

Les Fouques 2012 Cotes de Provence l'Aubigue

This wine offers everything one could desire in a Provencal Rosé: delicate peachy and stone fruit aromas, a lovely crisp palate, and very nice balance that combines freshness and acidity with weight and texture.  A blend of Cinsault, Grenache, Syrah, Vermentino, and Cabernet. Hauvette 2011 Les Baux de Provence Petra Rose

This is a gorgeous wine and one of the world's best rosés, regardless of price. Most rosé from Provence these days is sadly made with "selected" yeasts and many are chemically lightened to appear the proper pale color. Dominique Hauvette farms organically and ferments with wild yeasts giving a full-flavored rosé that's a joy to drink. Complex citrus, red fruits and floral aromas with flavors of peach skin, red currant and spice on the palate, this wine will accompany grilled meats, tuna, bouillabaisse and is delicious by itself. Don't delay as quantities of this unique wine are quite limited.

Costes (Domaine des) 2012 Bergerac Rosé

This lovely rosé of Cabernet Franc is a fabulous value! Certified organic, hand-harvested and fermented with wild yeasts, deep strawberry and raspberry fruit aromas, clean refreshing palate, full but well-balanced — not bad for $10.99! (OK, we don't like the modern label.) I don't know of any other rosé at this price that's made with such high-quality work. This will accompany tuna, chicken and grilled meats all summer and fall....

Pradeaux 2012 Cotes de Provence Rose "Chateau"

A blend of Cinsault, Mourvèdre, and a little bit of Barbaroux, the wine certainly does justice to the name of this famous Bandol Domaine. Fresh yet weighty, the wine delivers some of the earthy, savoriness of classic Bandol Rosé, thankfully without the cloying fruitiness of many Côtes de Provence Rosés. We think you'll want more than one bottle of this, so make sure to grab at least two... if not more. -msb

Pradeaux 2012 Bandol Rose

Robust, rich, and complex with an ability to age gracefully, this wine is based on Cinsault and Mourvedre, taking it's slight orange tint from the latter cepage. There's a wonderful earthy, salty quality to this wine that speaks very much of Mourvedre. Very limited availablility, and drinking ridiculously well right now.

Cal Demoura 2012 Coteaux du Languedoc Qu'es Aquo Rose

Another delicious rosé from Mas Cal Demoura! Darker and richer than the lighter styles in Provence, this wine is really delicious, with lovely red and yellow fruit aromas that carry through on the balanced, elegant palate. The ripeness is framed in mineral acidity and remains refreshing and food-friendly on the palate. Rimbert 2012 Vin de Table de France Petit Cochon Bronze

This is a forward and fruity yet dry Rosé from our friend Jean-Marie Rimbert in Saint-Chinian. The cépage is primarily Cinsault with some small additons of other regional grapes. Organically farmed and fermented with native yeast, the wine offers red berry notes on the nose and juicy, cranberry and cherry notes on the palate. There's also a pleasant hint of Languedoc funk and earth. A great wine for a barbeque and a fantastic value! -msb

Colombière 2012 Fronton Vin Gris

The 2011 Colombière Vin Gris is drinking beautifully — an elegant light-bodied rosé, made from 80% Negrette and 20% Gamay in the AOC Fronton, north of Toulouse. Proprietors Philippe and Diane Cauvin have organic certification (Ecocert) and have been practicing biodynamic since 2006. Lovely light peach and strawberry aromas with a hint of spice on the palate. Very crisp and well-balanced, a real rose of terroir, from low yielding vines on gravel/silica soils. Wild yeast fermentation, no chaptalization or acidification, and low sulfur, kept on the lies until bottling. A deliciouly dry and subtle rosé that will accompany a wide variety of cuisines. Pinon, François NV (2010) Touraine Brut Rosé

Made from Grolleau and Côt (Malbec) this superb sparkling wine has beautiful deep pink color, lovely high-toned red-currant/strawberry aromas, and a palate of citrusy ripe berry fruits with earth and spice—really delicious! François Pinon is one of the great winemakers of the Loire Valley, doing fabulous organic farming in the vineyards and precise work in the cellar, and his wines are very reasonably priced! Canals Canals NV Cava Rose Reserva

Memorable bordering on preoccupying, this is a deep garnet-hued organic Cava made from 60% Monastrell and 40% Garnacha. Rich, vinous fruit notes of ripest rasperries, sultry mirabelle plum, bitter cranberry, and ripe red apple skins is braided into a bone-dry bundle with broad dry earth and spice galore: peppercorns on the attack, cloves in the middle, and cayenne on the finish. The structure is opulent; the flavors, while broad, feel somewhat austere. If this sounds contradictory, it's because Canals Canals is different and special. A fascinating foil for salty pork products, spicy burgers, pastas featuring sausage, hearty soups, and chocolatey things. -AR

Raventós I Blanc 2010 Conca del Riu Anoia L'Hereu de Nit Reserva Rose

Raventós steps out of the Cava appellation with the 2010 de Nit rosé, which is the first wine to fall under the new Conca del Riu Anoia designation. Conca was created in an effort to prioritize biodynamic farming, estate fruit, lengthier élevage, and indigenous varieties. De Nit is delicious every year, but the 2010 is especially lovely! Aromas of pert pink lemonade, tart cranberry, pink sweet tarts, just-cut grass, and garnacha vinegar with a spry, spicy palate of strawberry seeds, musky ripe raspberries, and a puff of sandy soil. An incredible versatile sparkling wine for apéritifs, snacks, richer seafood, and spicy fare. -AR

Ameztoi 2012 Getariako Txakolina Rubentis Rose

Tart, tingly, and thirst-quenching, this is the bottle to take to the rooftop and enjoy in one sitting. Red currant, rhubarb, and strawberry fruit, with abundant minerality and a fresh salty streak that is virtually transportative (and much more affordable than a trip to San Sebastian). -AR

Bonavita 2012 Terre Siciliane Rosato

Giovanni Scarfone tends to his family’s vines overlooking the strait of Messina -between Sicily and Calabria- the historic home of Faro, a blend of Nerello Mascalese, Nerello Cappuccio, and the local star Nocera.  Faro is usually a fairly powerful wine that can reward a bit of cellaring, but for something fresh to drink with lighter foods Giovanni makes a tiny amount of Rosato every year.  The grapes enjoy up to thirty hours of maceration; the result is an intense wine with dark crimson color and deep strawberry fruit that speaks to Sicily’s Mediterranean coastal climates.  Last summer I found that the wine was fantastic with anything from simple pastas to robust barbeque.  Don’t hesitate, as these always go fast!  JR

Montenidoli 2012 IGT Toscana Rose Canaiuolo

Canaiolo, along with Colorino, is one of the two unsung hero grapes of Chianti. Finally we have an opportunity to try one vinified independently as a rosato!  Elisabetta Fagiuoli holds the reigns at this historic estate, and has made a name for herself as an early adopter of organic viticulture in Tuscany.  Her rosato is made of free-run juice, and is bottled early for freshness.   Aromatically, the wine shows floral and mineral qualities with a touch of peach, berry fruit, and smoke.  The palate is very dry with a snappy, savory finish.  It’s hard to imagine a picnic this wouldn’t complement or a hot day when this wouldn’t be refreshing.  JR
