Recent arrivals to Chambers Street have included some of the most sought-after natural wines of France (or "wines of nature" as Didier Barrouillet would say) - we've selected some of our favorites for this email and Racines NY will feature them by-the-glass - one night only - just up the road at 94 Chambers Street next Tuesday, August 4th, from 6:00 until closing. All of these wines are insanely delicious, made without or with minimal SO2 and are products of meticulous organic/biodynamic farming.

In the spotlight today is the wonderful Clos des Vignes du Maynes Macon-Rouge "Cuvée 910."  The Guillot family has been in the vanguard of natural wine since the creation of the estate in 1952, "three generations of vignerons engaged from the beginning in a battle for wine produced in the most natural way possible, in the vines and in the cellar." (LeRouge&leBlanc #116) The vineyards in the Clos have never been treated with chemical fertilzers, herbicides or pesticides and contain many old varieties of Pinot Noir, Gamay and Chardonnay, maintained by massale selection. The Cuvee 910 is Julien Guillot's fantastic experiment - to make a wine exactly as it was made eleven hundred years ago. The grapes were hand harvested, transported in ox-carts, foot-pressed and vinified with wild yeasts with zero additives. In the 2014 vintage the result is outstanding -  a refreshing natural wine that is also a complex and serious glass of Burgundy!

Also featured today are wines from Cyril Fhal at the Clos du Rouge Gorge - elegant, balanced and full of character, perhaps the finest from the new generation of wine-makers in the Languedoc-Roussillon. They are products of living soils, uniquely beautiful with pure silky fruit, moderate levels of alcohol and firm acidity - delicious examples of the indigenous grapes of the Roussillon.  The vines have been tended in biodynamic farming from the beginning, with light plowing by hand, horse or rototiller. Natural composts and biodynamic treatments have revitalized the soil, and plants and flowers among the vines bring beneficial insects and a diverse fauna - the mountainside vineyards have a magical quality and seem to blend in with the surrounding sparse vegetation. Yields at Clos Rouge Gorge are normally 10 to 20 hl/ha, harvesting is by hand into small baskets, light crushing by foot is followed by slow fermentations (traditional, not carbonic maceration) with no extraction, alcoholic and malo-lactic fermentation in barrel.  These are wines of great purity and finesse that combine delicacy and power.

Vignes du Maynes 2005 Crémant de Bourgogne Ste. Geneviève Ex Brut

A store favorite has returned in its new, changed form. Almost 10 years on its lees before disgorgement in November, 2014 and made from grapes grown in a vineyard that has never received any artificial chemical treatment and filled with sometimes 100-year-old, selection massale, vines, yet to think of Julien Guillot's wines by the numbers is to miss the point. His Cremants remind us simply and understatedly that all wines come from vineyards and that all sparkling wines are but wines - beneath the bubbles lies a beautiful white Burgundy from exceptional terroir.

A discrete, but finely beaded mousse adorns the bold and savory 2005 Ste. Geneviève Extra Brut, while aromas of apple pie, honeysuckle, and spearmint float forward from the glass. the palate is broad, powerful, and possesses a certain tannic grip, which carries spicy notes of cinnamon and mace at the edges. This is a cremant with enough power and complexity to be paired with a meal. Enjoy!

Rouge Gorge (Cyril Fhal) 2014 VdP des Côtes Catalanes Jeunes Vignes

For natural wine-lovers what could be better than Cyril Fhal at Thanksgiving! A profound and insanely delicious wine! From 30 year-old Grenache vines in a parcel on gneiss subsoil called Mont-Redon. Hand-harvested into small baskets, foot pressing followed by three month vinification in wooden vats, then 8 months aging in stainless steel. "An infusion of grapes, allowing an expression of the delicacy of the variety," says Cyril. Slight reduction, then ripe, complex aromas of blackberry, black-cherry, citrus, violet, plum skin and earth. Intense fruit on the fresh, medium-bodied palate, with blackberry and tart black-cherry, licorice, meat and earth, silky texture with lively acidity and fabulous length. Needs 2 - 3 hours to open, or hold 3 to 5 years.

Jousset, Lise et Bertrand 2013 Montlouis-sur-Loire Bubulles Pet Nat (Arrives 7/30

Simply put, this is top-shelf Pét-Nat for a picnic-friendly price. Lise & Bertrand Jousset have put the work in their sand and flint speckled, organically farmed Chenin vines (45 years of age on average) in Montlouis-sur-Loire. All cellar operations are by gravity, without pumping, the fermentaion is in 3 to 6 year-old barriques of 225 and 400 liters. The wine is vibrant straw yellow and adorned with a fine mousse. The nose reveals aromas of Granny Smith, green plums, and heather honey. A finely chiseled palate is bone-dry with hints of dried pear, apple and anise over a core of saline minerals. This is a thirst-quenching Pet-Nat, made without sulfur, that happens to be a serious and elegant wine that would put many Champagnes to shame...!

Ducroux 2014 Vin de France Esquisse Rose

Christian Ducroux's unique and delicious "Esquisse" Rosé has arrived! A totally natural wine, made without sulfur-dioxide or other additives or adjustments, the Esquisse is from a high-altitude parcel above Thulon and weighs in at a refreshing 10.5% alcohol. Tasted in early February, the malo was done but not the alcoholic fermentation -  happily the wine finished in beautiful shape, bone dry and scintillating with aromas of white peach and raspberry. The palate shows brisk acidity and earthy mineral flavors, with light berry fruits, white pepper and stone. Christian is making some of the most interesting natural wines in France and his farming is certainly among the finest anywhere. We're proud to offer these exceptional wines at Chambers Street!
