Following the first global, commercial success of Champagne in the 19th century, its growers have had every incentive to adopt the most pragmatic and efficient practices, certainly in their vineyards and often in their cellars. Rather than diminish the region’s many good and worthy growers or rail against its governing bodies, the growers that absorb physical and financial pinches for the sake of their grapes can be praised independently. Therein is a story compelling and important enough to stand on its own terms.

Over the last 17 years, Fabrice Pouillon (pictured below) has worked his 6 hectares of vineyards, in the villages of Aÿ, Mareuil-sur-Aÿ, Avenay-Val-d’Or, Épernay, Festigny, and Tauxières-Mutry, with a degree of care and attention that now make his wines a vital chapter in the story of Grower Champagne.

 

Fabrice began the conversion to organic and biodynamic viticulture in 2003. Today, cover crops, herbal sprays, compost management, and working soils have yielded healthy, vibrant, and beautiful vineyards.

This kind of farming unavoidably results in lower yields and given that Champagne has some of the most highly valued farmland in France; Fabrice’s viticultural choices come at a very real cost. However, he holds these principled and quality-focused lines from harvest to cellar.

Although Champagne has some of the strictest regulations in France for pressing grapes, Fabrice goes one step further by vinifying, separately, each parcel and each run (serre) from his traditional wooden press (pictured below).

The resulting wines are among the aromatically delicate, texturally nuanced, and delicious Champagnes on our shelves.

Fabrice’s two single-parcels Champagnes, Les Valnons in Aÿ (red apple tones) and Les Blanchiens (floral and herbal tones) in Mareuil-sur-Aÿ are worthy, terroir-specific wines. Other highlights include the Rosé de Saignée (delicious dark cherry notes) and the late disgorgement, 2004 Blanc de Blancs from Aÿ and Mesnil-sur-Oger, which has aged beautifully and offers a hauntingly long finish.

We’re excited to offer a full range of Pouillon Champagnes and we eagerly await the December arrival of Fabrice’s first natural wine, the single-parcel 2008 Chemin du Bois.

Pouillon, Roger NV Champagne Brut Reserve (Summer 2015)

Perhaps our most compelling Brut Réserve NV of the 2015 holiday season. It certainly makes a case for itself with the kind of pitch perfect balance that you would expect from a prestige cuvée. The blend is 70% Pinot Noir and 15%, each, of Chardonnay and Meunier. 85% of the vins clairs are fermented in tank and the remainder in used barrels. Most interestingly, there's 30% of reserve wine in this Brut Réserve. Light golden in color, the nose offers aromas of limewood, hazelnuts, Cortland apples, nutmeg and biscuity tones. The palate shows impeccable poise with a singing minerality that carries notes of gooseberries, thyme, and violets to an herbal and floral finish. The perfect apéritif and simply refreshing! Pouillon, Roger NV Champagne Brut Reserve (Winter 2014) 1.5 L

The magnum of Pouillon's Brut Réserve N.V. has the same Pinot Noir dominated blend as the regular format bottlings. Like the 750s this wine also has 30% of reserve wine, which extends back to the late '90s. However, this is where the regular format bottlings and the magnums part company. Firstly, the wine is brilliantly golden in the glass and its bead is noticeably finer and much more discrete. The nose shows aromas of white flowers, honeysuckle, buttery brioche, red currants, and lemongrass. The palate is harmonious, lifted, and delicate with a terrific minerality that brings along aromas of limewood, cherry blossoms, starfruit, and elderflowers through to a lemon verbena, lengthy finish. Pouillon, Roger NV Champagne Blanc de Blancs Brut Winter

The Chardonnay for this cuvée are sourced from several of Fabrice's parcels 85% of the juice is fermented in steel tanks and 15% in aged barrels. The vintage blend is 70% 2010 and 30% 2009. Light golden in color and showing a generous, but super-fine mousse, this Blanc de Blancs offers aromas of fresh lemon zest, quince, tamarind, and chestnuts. The palate is very high-toned with a striking minerality that carries aromas of lemongrass, verbena, and marjoram that carry on to a grapefruit and sea salt finish. The pronounced and sustained minerality make this taste more like an Extra Brut.

Pouillon, Roger NV Champagne Blanc de Blancs Brut (2010 base) 1.5 L

Much to the chagrin of the rest of the Chambers Street staff, we are featuring this Champagne in our offer today. It is without question one of the great values in our store, in any category of wine. Paralleling the Pouillon's regular format Blanc de Blancs NV, this a blend of 70% of the 2010 vintage and 30% reserve wine. In contrast to the regular format bottling, this wine could come closer to passing for Chardonnay from the Cote des Blancs. Pale golden color in the glass and showing a finely-beaded mousse, the nose offers aromas of quince, white flowers, lime blossom, and lemon zest. The palate is a whirl of minerality that carries aromas of lemon verbena, chamomile, and cardamom through to a savory and herbal finish. These are the last two bottles in the store and at the distributor.

Pouillon, Roger NV Champagne Rose de Saignee Brut 1er Cru

Good Champagne rosés are, in fact, difficult to find. Pouillon's Rosé de Maceration is balanced, juicy, and highly drinkable! The Pinot Noir fruit for this rosé is entirely sourced from a premier cru parcel in Mareuil-sur-Aÿ. It shows a pale copper-pink color in the glass and the nose is pleasantly complex with aromas of red cherries, blood oranges, tarragon, thyme, cinnamon, and cardamom. The palate is juicy, but lifted by a humming minerality, while aromas of Morello cherries and smoky tones are offered before a black cherry and cinnamon finish. (Disgorged : Spring 2014).

Pouillon, R NV Champagne 1er Cru Brut Solera (Winter 2014)

Pouillon's Solera is one of the most affordable Champagnes of it kind. 50/50 Pinot Noir and Chardonnay from Mareuil-sur-Aÿ. The "solera" dates back to 1997 and is kept in a stainless steel tank. Every year 30% of this reserve wine is removed from the tank for secondary fermentation. The idea of this cuvée is to downplay vintage variation in favor of the expression of the Mareuil terroir. Deep golden in color and sporting a fine mousse, the nose delivers aromas of wisteria, fresh baguette, Doyenne pears, and a touch of mocha. The palate is weighty, powerful, and rounded with aromas of Bartlett pears, Fuji apples, that are laced by a fine minerality that carries through to a lemon zest finish. (Disgorged : Summer 2014).

Pouillon, R 2007 Champagne Grand Cru Extra-Brut Les Valnons

If there were to be a Chambers Street lineup of Champagnes that through their uniqueness help make the case for the terroir of Champagne then Pouillon's Les Valnons would have to be featured. A 100% Chardonnay from the Pinot Noir dominated village of Aÿ is a rarity and rarer still is a single-parcel blanc de blancs from one of Aÿ best slopes, Les Valnons Froid Cul. The fermentation of the vins clairs is divided equally between used barrels and enamel. The wine is medium gold in color and shows a finely beaded mousse. The nose offers aromas of sea salt, Cortland apples, and sage. The palate is broad, weighty and finely detailed of star anise, cardamom, and thyme through to a tart apple finish. Pouillon, R 2007 Champagne 1er Cru Brut Nature Les Blanchiens

This Champagne makes the case for the exquisite interplay between Pinot Noir and Chardonnay in the village of Mareuil-sur-Aÿ. Sourced from a single parcel, co-planted with organically farmed Pinot Noir and Chardonnay in chalky-clay soils, this wine is pale golden yellow and sports a finely understated mousse. The nose offers aromas of Mirabelle plums, verbena, Gyokuro tea, and Seville oranges. The palate shows the potential of the 2007 vintage. A perfectly balanced opening rises to a crest of minerality in the mid-palate, which carries notes of Greengage plums, fennel, and tamarind through to a wonderfully savory finish. Pouillon, R 2004 Champagne Grand Cru Extra Brut

This is another rare blend Champagne of 50% Chardonnay from Aÿ and 50% Chardonnay from Mesnil-sur-Oger. The primary fermentation for the vins clairs is done mostly in stainless steel tanks and one quarter in aged oak barrels. This Blanc de blancs has aged beautifully. It shows a deep golden color in the glass and is adorned with a super-fine and discrete mousse. The nose offers aromas of nutmeg, baked apples, dark chocolate, and bitter oranges. The palate is weighty, super-concentrated and rides a wave of minerality that rolls and breaks with aromas of lemon sorbet and lemon verbena. Complex and delicious with almost 10 years of lees-aging!
