We are pleased to announce a very special dinner with Dominik Huber, winemaker and founder of ground-breaking Priorat winery, Terroir al Limit. Torroja del Priorat is a postcard-perfect, rustic Catalan town of around 160 people, nestled in the side of a mountain and surrounded by gnarled old vineyards of Carignan and Garnacha, which cling to precipitously steep, poor, rocky slopes of llicorella slate soils. In a small garage winery on the edge out of town, Dominik Huber of Terroir al Limit gently ushers his biodynamically-farmed Carignan and Garnacha grapes into complex and vivid translations of Priorat that expose the limits of these local varieties, pulling back from the ripeness and technique that defined Priorat's explosive modern renaissance, while harkening back to the simple brilliance of the first bottled wines of the region. In Huber's own words:

"There was a moment, even before Rene Barbier arrived in the Priorat, when Celler d'Scala Dei was producing wines, bottled in a Burgundy bottle already,  which I think is quite interesting from a historic point of view, made from Grenache before the arrival of modern winemaking techniques from France, there was no destemming, no stainless steel, there was no pigeage, there was no extraction, there was no new oak, just beautiful wines made in the 1970s. We can still taste these bottles. This is actually the type of wine Terroir al Limit references. It’s a summary of the whole place. You have a 1000 years going into these bottles before you had this aggressive new start, which was necessary because Priorat was dying, but I am trying to reconnect with this time before the 1980s." The origin of Terroir al Limit is a friendship between Huber, descendent of Bavarian butchers with a keen palate and passion for food and wine, and South African luminary  winemaker Eben Sadie. The young men met at Mas Martinet winery in 2000 and united under a shared belief in the potential of Priorat's forbidding terroir to yield exceptional grapes and singular wines. Terroir al Limit was born. Today, with Dominik Huber at the helm since 2007, Terroir al Limit has achieved a devoted following among wine lovers looking for lighter, more gastronomic Priorat wines, as well as natural wine enthusiasts (Huber uses biodynamic methods and minimal SO2), and professionals fascinated by stylistic outliers of classical regions. The winery operates on a more Burgundian model, according to which vineyards are understood as crus -- premiers vs. grands -- and their resulting wines as essential translations of Priorat's diverse terroirs, their characters and contrasts. Dits del Terra and L'Arbossar, composed of 100% Carignan, are Terroir al Limit's premiers crus, along with the fascinating white Pedra de Guix, made of Pedro Ximenez, Macabeo, and Garnacha Blanca; Les Tosses (90 year-old Carignan on llicorella soils) and Les Manyes (Garnacha from clay and limestone soils at 800 meters altitude) are the magnificent grands crus, from two of Priorat's most arresting sites.

Terroir Al Límit 2012 Priorat Torroja Vi de la Vila

Dominik Huber of Terroir al Limit uncovers an unheralded side of Priorat in his inspired "village" red, the Torroja Vi de la Vila. The Garnatxa and Carignan for this cuvée come from lower, flatter, and cooler vineyards than the precipitously steep, sun-baked, slate slopes that make Priorat famous (and famously difficult to farm, hence expensive). Fermented whole-cluster with native yeasts and aged in used large 1200 - 3500L foudres or concrete tanks, the result is a bright, balanced, and food-friendly wine. Brisk and herbal, with abundant red and black currants and purple berry fruit, fresh green herbs, savory dried tobacco leaf, crunchy berry seeds and skins, and exquisite floral and mineral layers to thrill devotees of the region (harvested early for refreshing acidity and moderate alcohol—13.5%—to subdue its detractors). Terroir Al Límit 2012 Priorat Terra de Cuques White

Dominik Huber's 2012 Terroir al Limit bottlings are some of his best wines yet. While his red wines are famous outliers in Priorat for their moderate alcohol levels and gastronomic flair, his white wines are every bit as thought-provoking and delicious. Terra de Cuques is a blend of Pedro Ximenez and Muscat de Alexandria, fermented with native yeasts and 10 days of skin maceration and raised in concrete tanks with the addition of some whole clusters; it pulsates with the minerality of two Priorat terroirs - licorella and limestone - from attack to finish. Fragrant scents of candied orange peel, fresh turmeric, and rosewater rise from the glass and infuse the bold, savory, spicy, and deeply mineral-driven palate, full of apricot fruit, tea leaves, and heady garrigue. Terroir Al Límit 2012 Priorat Dits del Terra

From the south-facing Dits del Terra vineyard of 90 year-old Carignan vines that claw at the poor, rocky llicorella soils like gnarled fingers ("dits"), one of the first plots Dominik Huber and Eben Sadie pinpointed when starting Terroir al Limit. This bottling is a highlight of Dominik Huber's excellent 2012 lineup. Structured and serious, layered and spicy, with crunchy black berry fruit, exotic herbs, and loads of gritty mineral earth, fermented with whole clusters and aged in a large 3500L Stockinger foudre.
