Hello friends and family, welcome to our wine registry. Why a wine registry you ask? (Well, wine not?) For starters, we live in a tiny, tiny space in the heart of Manhattan that is at its full capacity of things. We have, however, invented strategic holding spots for a respectable wine collection, and since then we've been having a great time collecting and exploring the world of wine.

The truth is, we tend to geek out about things. We've both brewed beer and gotten into the minutiae of a particular style. We love to travel, exploring and picking out the idiosyncrasies that are unique to a particular place and culture. We've spent too much time poring over the history and lore of both the real world and a couple that are completely made up. Nerds. 

Wine ticks a lot of these boxes for us. It is particular. It is historical. It is unique to it's culture and there is more to learn than we ever will (not for lack of trying). Wine tastes like the place where it was created. It changes, both with age and with food. It leads to great conversations and great (though sometimes fuzzy) memories. 

So here's a place that you can buy us wine courtesy of the best wine shop in New York, and maybe anywhere. After giving us a tour of the shop and getting to know our tastes, Eben Lillie has curated this list for us. There are some on this list that we've had before and quite a few that we're excited to try for the first time. Rest assured, we're going to find a couple more things to geek out about.

Gonzalez Byass NV Jerez Tres Palmas Fino 500ml

Gonzalez Byass' Palmas series is an exploration of the most extreme and elegant expressions of the soleras that feed Tio Pepe - arguably the world's most consistent, classic, and popular fino sherry. Tres Palmas 2015 is a selection of a single cask in a ten year-old (average) solera, which stood out as the only cask among 150 where a small amount of flor had survived. A dramatic and drop-dead delicious pairing for rich smoked fishes, duck, and roes, Tres Palmas exhibits immense complexity from spicy aromas hinting at cinnamon oil and bark, to the intensely savory, shape-shifting, palate that showcases autolytic flavors and textures, umami and rancio, as Gonzalez Byass puts it: "the limit between life and death, the agony of the flor." Varnelli Amaro dell'Erborista 1 Liter

This is the most powerful Amaro I have ever tried. To drink it is to experience a brisk and bracing shock of mountain roots and herbs. The flavors are intense enough to make one’s whole mouth tingle, and the experience lasts for several minutes. As a warning, it must be said that this tonic is brutally dry, rich, and smoky. One could tackle a glass neat after dinner, or a splash could go a long way in creating unique cocktails. This tonic is made with botanicals that are smoked prior to maceration, and mountain honey is used (extremely sparingly) as a sweetener. For the adventurous there is nothing else quite like it! JR

Buisson , Henri & Gilles 2013 St. Romain Blanc Absolu Sans-Soufre

As much as a rich meal such a Thanksgiving makes one think of richer, more powerful reds, one should never be afraid to use this occasion to embrace the idea of WWWP (white wine whenever possible). Bright acid and minerality will cleanse the palate and can lift the spirits. Organic Burgundy grower Henri and Gilles Buisson produce one of our favorites from their beautiful vines in St. Romain overlooking the Côte de Beaune. The cooler vineyard sites produce nervy white Burgundy which has a great tension between effusive citrus peel and floral perfume and a distinctly mineral palate. The Absolu bottling is made completely without SO2 which lends even more aromatic purity, and greater clarity to the fruit. John McIlwain

The Buisson family is constantly experimenting in the vineyard and the cellar, pushing ever closer towards the goal of not using any chemicals or additives (pesticides, herbicides, sulfur, etc.) during any part of the winemaking process. Obtaining organic certification by ECOCERT in 2009 was a big step in the right direction, and their addition of the two Absolu cuvées to their current lineup of wines is a marked commitment to their efforts. The Absolu Saint-Romain Blanc is vinified the same way as their other cuvées but forgoes the addition of sulfur at bottling. This truly adds another dimension to an already thoughtful and delicious wine giving it an energy and texture that only comes from naturally made wines. Vivid fruit and nut aromas mingle with a delicate spiciness on the nose and the palate is sharp, a touch salty, and very fresh. It’s not often you are able to taste a sulfured wine alongside its sans soufre companion so that makes for a fantastic experiment! Tim Gagnon

Lafouge 2013 Meursault Les Meix Chavaux

One of our favorite producers in Burgundy, Jean and Gilles Lafouge make beautiful wines which offer tremendous  value. Les Meix Chavaux  located beneath Les Luchets and adjacent to Les Chevalières. Lafouge's vines are 80 years old planted in calcareous clay producing Meursault with  textbook richness and minerality. The 2014 shows lemon blossom citrus peel and chalk on the aromas with a discreet touch of oak. The mid-weight palate offers flavors of ripe stone fruits and notes of Meyer lemon surrounding a chalky core of minerality. This shows poise and energy and while delicious now should round out with more time in the bottle. Wonderful with crab or lobster, better still with roasted whole fish or chicken. John McIlwain

Marnes Blanches (Geraud Fromont) 2014 Cotes du Jura Savagnin En Quartre Vis

Although the 2015 vintage of this wine just became available, we wanted to highlight the 2014 as it is drinking beautifully right now. The Savagnin for this cuvée is sourced from a few different parcels, all of them vinified separately in neutral barrique before being blended together in stainless steel tank before bottling. It has all of the classic lusciousness that Savagnin can offer while also displaying wonderful purity and tension. This wine definitely has the structure to age well, as long as you have the will power! Tim Gagnon

Carmarans, Nicolas 2014 Vin de Pays de l'Aveyron Selves (Chenin)

The wines of Nicolas Carmarans never fail to reflect the natural, rugged beauty of the region from where they are made. A stand out during a recent tasting was Selves made from 100% Chenin Blanc from vines aged anywhere from 5-50 years old that are planted in granitic soils. The nose is very pretty with seashells, white flowers, a touch of smoke, and ripe tropical melon. On the palate it is lean and mineral, complete with mouth-coating, fleshy tropical fruit, a racy acidity, and beautiful tension. Chenin Blanc isn’t usually what comes to mind when thinking of Aveyron, but this is something special. Tim Gagnon

Arndorfer 2013 Strass Gruner Veltliner "Per Se"

Swan, Joseph Vineyards 2014 Russian River Valley Catie's C Grenache Blanc Cuvee Orange

Joseph Swan makes Grenache Blanc? Two, in fact, and they're glorious! This is Rod Berglund's first time making Grenache Blanc, from a tiny planting in Catie's Corner Vineyard, so he vinified it two ways: with and without skin contact. The Cuvee Orange spent 3.5 weeks fermenting on the skins, which imparted a gleaming jewel-tone topaz in the glass, with heady and floral aromas of exotic citrus oil, apricot, passion fruit, and wild flowers, with a refreshing rush of acid on the palate of Meyer lemon, grapefruit rind, pink peppercorns, crunchy peach, and juicy yellow plum. An inspired accompaniment to flounder or chicken from the grill, falafel and middle eastern spices, roasted pork with white beans, cheeses, and charcuterie (especially liver mousse). Immich-Batterieberg 2014 Mosel Escheburg Riesling

A cuvée of all Grand Cru vineyards boasting mostly ungrafted vines with a minimum age of 60 years. Not made every vintage, the 2014 is showing a touch of the tropical. Tasted in spring and again in summer, there has been a development of pineapple and passionfruit on the nose, but the stoniness remains. The palate is tart, stony, and moves more towards subtle peach and apricot. Cari Bernard

Enfield Wine Co. 2014 Sierra Foothills Pretty Horses Tempranillo

What to do while we wait for Enfield's fabulous Shake Ridge Tempranillo to mature? Drink Pretty Horses! Enfield's John Lockwood is a long-time lover of Spanish wines, the rare new-world winemaker who understands the potential finesse and complexity of Tempranillo. Pretty Horses made from 2 well-known sites: Shake Ridge in Amador County and Matthew Rorick's (Forlorn Hope) Heritage Vineyard in Calaveras. Hibiscus, black pepper, spicy raspberry and earthy cherry, oregano, and orange oil on the nose, with a bright, earthy palate of red plum, stewed strawberry, cherry cola, and thyme, with soft, sweet  tannins and and warm soil on the finish. Jane et Sylvain 2013 Gevrey-Chambertin 1er Cru Fontenys

Jane et Sylvain have a superb, tiny parcel of Gevrey 1er Cru "Fontenys", high up in the southwest, separated from Grand Cru Ruchottes by a dirt track. They are certified organic and age the wine in old barriques. The 2013 is a bit coiled upon opening, but with an hour or so of air opens to reveal cherry and red berry fruit, wet bark, savory earth, and spice notes on the nose. The palate has good density offering sappy cherry fruit, lively acids, and dark-toned minerality with firm but ripe tannins and a very long, savory finish. This is a classy Gevrey which will need 5-8 years to come together but should drink beautifully for another dozen years after that. John McIlwain    In January of 2014, I tasted the 2002 Gevrey 1er Cru Fontenys in the cellar with Jane and Sylvain.Their eldest son was born in 2002, so they saved a bunch for him, but were generous enough to share one with my father and me. It was transcendental - what I refer to as my "religious experience" with red Burgundy, and possibly one of the most memorable wines I've ever tasted. Flowers, stones, dried fruit, the subtle touch of tannin... truly a blissful experience. Jane says the wine has "la finesse du Ruchottes," referring to the Grand Cru vineyard that is literally feet away from the edge of their vines in the Premier Cru Fonteny.  Unfortunately we don't have any of the 2002 at Chambers, but the 2013 is a great purchase for the cellar - patience will reward you if you can wait for it to develop. Tissot 2015 Arbois Poulsard Vieilles Vigne Sans Soufre

Finally! It’s been some time since we’ve had Tissot’s Poulsard on the shelves, and I couldn’t be more excited to have it back. 2015 was an excellent vintage for Stephane (and many other growers in France), and he says this may be his favorite Poulsard he’s made to date. Sourced from three parcels of 45- to 90-year-old vines planted in clay soils, vinified with only native yeasts, and no SO2 is added at any time! It has all of the high-toned, crunchy mineral purity (without the reduction!) that I love about this grape and the palate carries smoky berries, blood orange, iron, and juicy red plum flavors. It is a bit more structured and tannic than some other wines made with Poulsard (no doubt a characteristic of the old vines) making it a solid choice for charcuterie or heartier meats where you would want some cut.  This is downright excellent. Huet 2008 Vouvray Le Haut Lieu Moelleux

*This wine is in the warehouse and will not be available for pick-up or delivery until after Labor Day.


2008 is a great vintage for moelleux and demi-sec Vouvray as the high acidity of the vintage gives fabulous brightness and balance to the extra sweetness. The Huet 2008 Haut-Lieu is superb now with terrines, foie gras, vegetable soups, mild cheeses and much more - and don't hesitate to age ten more years.
