Bubbles, an 'orange wine,' even a Macvin! We've recently received some new wines from our friends, the Villets, who have been working organically in Arbois for decades. We've been having a lot of fun drinking these and want to make sure you do too! 

Domaine Villet is a family estate that was started in 1900. Christine and Gérard took over in the 80's and converted to organic viticulture in 1988, making them one of the first estates in the region to do so.

Gérard felt the results were better with organic agriculture, so he eliminated the use of chemical fertilizers, herbicides, pesticides, and synthetic fungicides, favoring the use of manure, compost and organic elements. By the early 2000s, the only treatments used in the vineyard were copper (bouillie bordelaise) for mildew, and sulfur for oïdium. Since then, they have been minimizing the use of the copper and sulfur in the vineyard and relying instead on plant extracts, such as tea nettle, prêle (horsetail), willows, dandelions, and the like. The Villets believe firmly that vignerons must be working in the vines throughout the year in order to be attentive to the health of the vines and to reduce risks. They let natural grasses grow, but till to limit proliferation. They only use natural yeasts in vinification, as Gérard feels yeasts that are introduced are standardized and lead to a uniformity of taste, whereas natural yeasts allow the terroir to be fully expressed. A very low amount of sulfur is used at bottling.

Christine and Gérard are a warm and humble couple, and it's clear that they love what they do. Their comittment to organic farming, and to the health of their vines and the greater ecosystem, has inspired others (the surface area of organic vineyards in Arbois has gone from 1% in the 80's, to currently nearly 20%), and their wines are exceptional examples of the unique styles and expressions of the region.

Villet, Gerard & Christine NV Macvin du Jura

This Macvin is made from Chardonnay grapes (from 2013), and a homemade marc (or brandy) that is added to the juice before fermentation. It's a specialty of the region, and a curiously delicious one at that. Subtle oxidative notes, burnt orange, dried fruit, with the slightest touch of sweetness. Perfect with regional cheeses like Comte, lighter deserts, or on it's own. As it's higher in alcohol and has a bit of residual sugar, this will keep for longer than a normal bottle of wine. Keep it in the fridge and enjoy over several weeks.  Eben Lillie

Villet, Gerard & Christine 2011 Arbois Tradition

The Tradition white from the Villets consists of 60% Chard ouillé (topped up) and 40% Savagnin sous voile. The wine is kept for 2 years in large barrels. It's deliciously oxidative with pretty floral aromas, white peach notes, and a graceful finish.  Eben Lillie

Villet, Gerard & Christine NV Vin Mousseaux de qualité

A Cremant in everything but name, this Vin Mousseaux (a general term that refers to sparkling wines) is 100% Chardonnay Extra-Brut. There is no dosage so it's particularly bright, dry and clean. Vinified with indigenous yeast (like all of the Villet wines), this is perfectly refreshing (think Summertime), super 'digestif' and great for an apero or with food.  Eben Lillie

Villet, Gerard & Christine NV Cremant du Jura Rosé

A blend of Pinot Noir, Trousseau and Poulsard, this is a dark and flavorful Cremant du Jura, a bit reminiscent of a Rosato Lambrusco in it's color and light tannic structure. Red and black currant notes, and a really long mineral finish. This is a great sparkling rosé to have with food, though it's definitely got enough character to stand alone!  Eben Lillie

Villet, Gerard & Christine 2015 Arbois Pinot Noir

Never have I referred to a wine as reminding me a bit of Cran-Apple juice, until now. It's wine of course - it's Pinot Noir! - but it's got a crazy tart freshness and it's undeniably a Jura/Arbois/Savoie production. Great acid, an ethereal hue and just a hint of tannin to bring it all together. Though it's admittedly quite fun to drink, it's also a serious wine, and a lovely meditation on the Pinot Noir grape. Villet, Gerard & Christine 2014 Arbois Chardonnay Cuvée Orange

This subtly structured Chardonnay is a fantastic introduction to the world of skin contact whites. Here, the skins are kept with the juice until fermentation is finished, at which point there is a press, and then aging. This is not actually a very long period of maceration, but it's enough to lend a faint orange hue to the wine and it's evident from the mouthfeel that the wine has some structure to it. When I first opened this wine, I was expecting the textural characteristics and the flavors I've associated with orange wines in the past, but I was surprised by how beautifully aromatic the wine was. I forgot about the orange wine bit, and just let the Chardonnay do the talking, with flowers, earth, spice, and orchard fruit all intermingling on the nose. Really a unique wine in the layers to the experience, and recommended for those who are curious about skin-contact whites (aka orange wines), but don't necessarily want to dive all the way in.  Eben Lillie

From vines that Christine's father planted about 40 years ago, this was an instant hit with our staff and local customers alike. As is typical of the Villet Chardonnay offerings, the wine is not made in a sous-voile style, but vinified traditionally. It's fresh, mineral, and marked by a textural complexity that is compelling and exciting to the palate.   Eben Lillie
