The Chambers Street Wines/Wigle collaboration is back in the house, with our third annual single cask of their delicious monongahela rye whiskey, carefully distilled in the belly of Pittsburgh PA. Some bottles remain of two special Scotch single casks we purchased last year, part of the Duncan Taylor Octave series, from the distilleries of Aultmore and Glen Moray. Bottled at cask strength, but wonderfully balanced, these are perfect whiskies to pour on a chilly winter's night. Along with some higher end, collectible selections, we've included a few of our favorite everyday drinkers, bottles we never hesitate to reach for and are always happy to share. Happy holidays! Wigle Pittsburgh Organic Chambers St Rye 375mL

The words of Mark Twain still ring true in 2017: "Too much of anything is bad, but too much good whiskey is barely enough." Our seasonal single cask collaboration with Wigle from Pittsburgh is finally here! Wigle makes a wonderfully spicy and earthy rye whiskey, and this year's expression is no different. Gingerbread and candied orange dominate the nose, while the warming palate of this nearly cask-strength whiskey leads to more savory notes of nutmeg, clove, cedar and white pepper. This is perfect for sipping neat, but I wouldn't hesitate letting it loose in a Sazerac! Oskar Kostecki

Duncan Taylor Octave Series Glen Moray 2009 (7 Years-Old) Single Malt Scotch Whisky Chambers St. Malt #2

Glen Moray is a distillery in Elgin, on the banks of the River Lossie, about a thirty-minute drive northwest of the Aultmore distillery. Originally owned by Robert Thorne & Sons (the owners of Aberlour at the time) and called the West Brewery, it opened in 1895 before adding two stills and rebranding as a distillery in 1897. A fire at the Aberlour distillery in the early 1900s all but halted production at Glen Moray as they focused their attention to rehabilitating the destroyed facility. It closed in 1910, and lay dormant until the late 1920s when it was purchased by the owners of the Glenmorangie family, and has been distilling ever since.

Our Chambers Street bottling shows the other side of Speyside with a fuller, sweeter profile. Think peanut brittle, caramel, granola, maple cream, and dried flower petals on the nose, with a decadent mouthfeel and flavors reminiscent of honey roasted walnuts, treacle, and brown spice. The finish picks up some of the piquant notes from the sherry octave that it was finished in, resulting in a slightly sweet, intoxicatingly long, and complex finish.

Duncan Taylor Octave Series Aultmore 2008 (7 Years-Old) Single Malt Scotch Whisky Chambers St. Malt #1

The Aultmore distillery in Keith has a long and somewhat complicated history, as many distilleries in Scotland do. It originally opened in 1895 powered by water wheel (which was quickly retired and replaced with a steam engine that was in use for 70+ years, save for maintenance, during which time the water wheel would be brought back into use) under the control of Alexander Edward, who was also the owner of the Benrinnes distillery. By 1899 it was under new ownership, went bankrupt in that year, and reopened again in 1904 only to close yet again during World War I due to barley shortages. By the late 1920s it was operating at full capacity. It changed hands multiple times, but aside from a brief closure due to expansion in the late 1960s, operation continues to this day. Though they do release an eponymous bottling in small quantities, the majority of the whisky is destined for blended malts. This is a shame, since it is among the most classic Speyside single malts I have tried.

This Chambers Street Exclusive was aged in 600L sherry casks before being moved into sherry-refill octave casks for 9 months. Delicate, airy aromas of grapefruit zest and warm hazelnut are backed by more decadent notes of peach cobbler, fresh cut grass, and brown sugar. It has nice weight on the palate and is decidedly fruit-forward with underlying spice, honey, chocolate, and toffee notes. There is almost a nutty, briny note as well with a wisp of smoke that sneaks in on the finish. A very traditional dram, and one that you won’t see again.

Glengyle Distillery Kilkerran 12 Year Single Malt Whisky Campbeltown Non-Chill Filtered

Glengyle Distillery was first operational between 1873 and 1925. After it shuttered it was turned into a rifle range, and though there were a few attempts to reopen, none were successful until the year 2000, when it was bought by Mr. Hedley Wright, owner of Springbank and patron of Campbeltown. Using all Scottish barley and floor-malting at Springbank, Kilkerran shares many similarities with its neighbor, though is slightly lighter in body and less idiosyncratic, most likely due to the brand new stills that were installed upon reopening. Aged in both ex-bourbon and ex-sherry cask, this is the first 12 year age statement released and is well worth seeking out. A whiff of peat leads to a palate of toffee, butterscotch, citrus peel and a slight salinity. Out of the dozens of bottles in my whiskey cabinet, I find myself reaching for this one with frequency. Springbank 12 year old Cask Strength 113 Pf

Each year, this release gets me more excited than almost anything else. The 12 year cask strength has everything I love about Springbank whisky, but on steroids. Amplified aromas of dried fruit, dried cherries, citrus rind, and leather assault the palate, with a faint whiff of smoke and engine oil. This was aged in 70% sherry cask, and it shows in the creamy texture. Snap this up before its gone! Oskar Kostecki

Eigashima Shuzo Akashi Sherry Cask Single Malt Japanese Whisky

From Eigashima Shuzo's White Oak facility. This is a true sherry monster, aged in ex-Pedro Ximenez and finished in Oloroso casks, creating a thick and viscous mouthfeel and an extremely rich palate. Notes of dried friut and leather dominate, with orange rind, baking spice, and a slight balsamic quality. Eigashima Shuzo produces a miniscule amount of whisky, and this is by far their rarest release. Quite a treat. Oskar Kostecki

Couvreur, Michel Overaged Malt Whisky over 12 years old

Before he passed away in 2013, Michel Couvreur was undoubtedly one of the most interesting and inventive of independent whiskey bottlers. Along with experimental cask regimes that included everything from ex-Calvados to ex-Jura Vin Jaune barrels, Mr. Couvreur was a specialist of the sherry cask, travelling extensively throughout Andalucia sourcing the very best butts to age his purchased Scotch. The Overaged 12 Year is a perfect example of that, a heavily sherried malt with an approachable price-point. Chewy and viscous on the palate due to its complete lack of filtration, it has notes of raisins, sultana, fruit cake, dried candied fruit, and leather. Perfect for a cold Christmas evening. Kilchoman Islay Single Malt Scotch Whiskyn Sanaig

Kilchoman is the youngest distillery on Islay, but what it lacks in history it more than makes up for in terms of quality. Opened in 2005, Kilchoman have fiercely been crafting whisky with no shortcuts, no added color, no chill-filtration. Based on a working farm, they grow a portion of the barley used in production (with a view to one day being 100% self-sustainable), and are one of a handful of distilleries in Scotland that floor-malt on site. The Kilchoman Sanaig is an interesting bottling, quintessentially peated Islay whisky heavily finished in sherry cask. The initial arrival of smoke, earth, and iodine is wonderfully balanced with notes of fruit cake, raisin, sultana, and dark chocolate shavings. A perfect dram for the holidays. Oskar Kostecki

Bunnahabhain Single Malt Scotch Whisky 18 Year 750ml

Bunnahabhain is the only distillery on Islay that specializes in mostly unpeated or very lightly peated whiskies. On the other hand, they are masters of sherry cask aging, and the dried fruit, toffee and baking spice quality of this malt integrates perfectly with its coastal, slightly saline character. West Cork The Pogues Irish Whiskey 750 ml

One of our favorite blended Irish whiskeys, this bottling comes from the small, independent  West Cork Distillery, and is indeed inspired by the legendary folk-punk band. A blend of 10 year old single malt aged in ex-bourbon casks and 5 year grain whiskey aged in sherry cask. Triple distilled in the classic Irish style, this is light and floral with soft grain notes and a hint of dried fruit and baking spice. Oskar Kostecki

Mars Shinshu KomagatakeTsunuki Komagatake Tsunuki 58%

While this whisky was distilled at Hombo Shuzo's Shinshu Mars Distillery in Nagano Prefecture, it was aged at their new Tsunuki facility in Kagoshima Prefecture, on the southern tip of Kyushu Island. This is the historical site of Hombo Shuzo's Mars Kagoshima Distillery, open between 1978-1984, and it's very exciting to see whisky distillation make its way back to Kyushu, which is typically shochu country. The subtropical climate and high humidity lead to a textured and extremely well balanced single malt that drinks with far more complexity than its 4 years of aging might suggest. A few drops of water reveal a whisky with beautiful soft grain notes, almond, marzipan, pound cake, citrus, citrus peel, salted toffee, and a hint of smoke. Until Hombo Shuzo are able to increase production at both facilities, these whiskies will continue to be challenging to find, yet completely worth the effort. Oskar Kostecki
