Sebastien Poly took over this 7-hectare estate in the AOC of Ajaccio in Corsica from his family in 2006 and set to working with biodynamic techniques in the vines and working naturally in the cellar. All the vines are between 30 and 40 years old and are planted in granite and schist soils. This cuvee is made from 100% Sciaccarello and is fermented naturally with indigenous yeasts and is raised entirely in stainless steel tanks. It is bottled unfined, unfiltered, and with no SO2 added, making for a fresh and delicious wine. Pure red raspberry and strawberry fruit mingle with a delicate spice redolent of clove. Fruit-forward yet focused and structured on the palate with a striking acidity, this would be perfect served slightly chilled alongside grilled sausage or steak in the upcoming BBQ months! Tim Gagnon
