Brianne Day's first pét-nat, Mamacita, features an image of a spicy Flamenco dancer, but it drinks more like a country line dancer. Made from 100% organically farmed Malvasia grown in the Applegate Valley of Oregon, this effervescent bottling is as interesting as it sounds. There is no added yeast or sulfur. Instead, shortly after the grapes are pressed, the wine is stabilized through exposure to oxygen lending the wine flavors akin to sour beer and dry cider. A little sugar is added before bottling. Baked bread and white flowers on the nose. Golden hops, yeast, lemon zest and tart apples on the palate. A refreshing option for a summer barbeque or any occasion calling for some fizz. Lily Sears
