The Indigene is a special Crémant that starts in the same way as the basic Cremant, with a blend of 50% Chardonnay / 40% Pinot Noir / 5% Poulsard / 5% Trousseau. The difference here is that 60% of the wine is fermented and aged in barrel, and most notably, that Stephane uses his Vin de Paille* as the liqueur de tirage for the second fermentation. As far as Stephane knows (and he KNOWS Jura), he is the only producer doing this in the region. So, it's zero dosage, but using this special wine that is aging in his attic gives a level of complexity and richness that is not achieved with the entry-level Cremant. A spectacular Cremant, and due to some harvest issues in 2017, probably the only Tissot bubbles we'll get to drink in 2019. Eben Lillie
