    This bottling is a blend of three parcels from the Batardiere estate, with vines ranging in age from 15-90 years old. The wine is aged on the lees for several months in mostly stainless steel, and a small percentage is used to season their new 500L tonneaux. Farmed biodynamically with as little intervention as possible, the wine has a pleasantly rustic aroma mixed with ripe yellow apple and apricot. The palate is clean with a silky texture. Medium bodied and well balanced by the powerful acidity of Chenin Blanc, giving it a long, satisfying finish. This would be an excellent pairing for something delicate and creamy like scallops or butter-poached lobster. Michelle DeWyngaert
